Homemade Christmas | French Toast + Cranberry Jam

A few weeks ago I asked you guys which recipes you wanted to see here at p/c for Christmas. The winner was French Toast or, as in Portugal we say, Rabanadas!
This dish is very traditional all over the country, especially on a Christmas table. It dates back to the old times when bread was the staple-food at any meal. “Fatias de paridas”, another name for french toast, was even given to women after giving birth, soaked in wine and sugar and then fried in lard or olive oil, to help them stay strong and energetic for the baby.

Nowadays, the most common recipe twirls around eggs, sugar and milk… And I wanted to take it to the plant-based level so let’s forget everything and get to know the yummiest plant-based french-toast you’ll try in a long time. I promise! Crispy, moist, comforting and with the spice level to the point, these french toasts will make you forget the refined sugar versions.
This post is, again, a double recipe post – I’m feeling a bit too festive and giving <3 – and includes one of my favourite jams: Cranberry Jam! Using only maple syrup, this one is still tart and acid which makes the spices pop up in a more special way. I simply love it and been having it with everything since I made it last week.

I want to make clear that I do not believe in restrictive diets of any kind. I believe food is to be enjoyed and shared with family and friends. I do not create recipes purposely low in calories – I don’t count them – or in carbs or in fat. I do believe in a plant-based lifestyle, with little consumption of animal products from time to time. My recipes are supposed to be enjoyed for their taste as well as for their high content of natural ingredients, from vegetables, fruits, beans, seeds, nuts, wholegrain cereals and, of course, water!
I feel that there is still a big mess around wanting to be healthy vs. wanting to slim down. My recipes and thus, my work, is all about real food, with natural ingredients, made by our hands and enjoyed by us all. It can, eventually, make the scale go down but that is not the ultimate goal! The point is to be healthy, to live in Health.

Now that I spoke my heart out and feel lighter, let’s move on to the recipe!

Plant-based French Toast
6 people

Ingredients:
1 cup chickpea flour
1/2 cup coconut sugar
1 tsp cinnamon powder
1/2 tsp cardamom powder
1 pinch sea salt
2 cups oat milk, or other plant milk
8-10 slices of bread (day-old)
2 tbsp ghee, or coconut oil
1/4 cup coconut sugar
1 tsp cinnamon powder
Cranberry jam, to serve (recipe below)

Method:
1. Combine the first five dry ingredients in a bowl and stir. Add the milk, in stages, and whisk well so no lumps form in the batter.
2. Heat a non-stick pan and add a bit of ghee.
3. Soak the first slice of bread in the batter, pressing gently on both sides, so the liquids can soak the bread nicely.
4. Fry the bread on one side until golden, turn and cook a bit more.
5. Meanwhile, prepare a dish with coconut sugar + cinnamon.
6. When cooked through, remove the bread from the pan and place it on the cinnamon-sugar dish and coat well.
7. When generously coated, pass the french toasts to a serving plate and to the same to the rest of the slices.
8. Serve warm with cranberry jam (recipe below).

Cranberry Jam

Ingredients:
200 gr fresh cranberries
1 cinnamon stick
4 cardamom pods
1 star anise
1/4 cup maple syrup

Method:
1. In a small pot, heat all ingredients and let boil for 10-15 minutes, stirring to prevent sticking.
2. Taste and season, if needed.
3. Pour into a container and keep refrigerated for up to 4 weeks.
