Two-Ingredient Raspberry Smoothie

For the real deal raspberry lovers like me, I created this super simple, two-ingredient smoothie bowl!
I’m not even sure I can call it a recipe but I needed to share this one with you guys!

The “secret” ingredient is young coconut meat, that makes everything extra creamy and indulgent, is a great fast-breaker (meaning, amazing for breakfast!) due to its high concentration of healthy fats and thus makes us feel satiated for longer.

As for toppings, my go-to’s are (more) raspberries, cacao nibs, and my favourite granola. At the moment, I am having the newly released Trinca (cranberries and coconut) sweetened only with coconut sugar. This ingredient comes to replace agave syrup they were using before and is more processed and less healthy.
Coconut sugar is one of the least processed sugars and has a lower glycemic index when compared to other natural sweeteners.



Two-Ingredient Raspberry Smoothie
1 person

1 cup raspberries
1/2 cup young coconut meat
6 raspberries
1 teaspoon cacao nibs
2 tablespoons your favourite granola

1. Blend the raspberries with the coconut meat until very smooth and bright pink!
2. Serve the smoothie on a bowl or in a papaya, like I did, and add your favourite toppings. Mine are raspberries, cacao nibs and granola from Trinca.
