Express Skillet Granola

How many times you craved something extra crunchy to top your smoothie, porridge, yoghurt… And you’ve run out of granola? This recipe is the perfect allied to make when you’re short in time (and maybe even ingredients)!
Just pop some seeds and nuts onto a skillet, toast well and caramelize with maple syrup. Simple, right?

I make this small batch of granola in 10 minutes, and it can last me one, two or three servings, depending on the amount of ingredients I add to it. It is just perfect to supply me while I take time to make my big batch of granola (see my favourite recipe here, revolutionary granola that will change the way you make yours!)

As always, I developed a recipe that can be adapted according to your own preferences, so if you want to add oats for carbs and fiber, do it; other seeds or nuts cause that’s all you have at home, go ahead; switch the maple syrup for other liquid sweetener or even coconut sugar, you can; spices like cinnamon and cardamom go great, just make sure to add them by the end, as well as for dried cranberries or other dried fruits, so they don’t burn.

Express Skillet Granola

 

Ingredients:
2 tbsp sunflower seeds
1 tbsp pumpkin seeds
1 tbsp chopped hazelnuts
1 tbsp coconuts shavings
1 tiny pinch of salt
1 tiny pinch of vanilla powder
1-2 tsp maple syrup

Method:
1. Heat a skillet on medium heat and all all the nuts and seeds, shake as you go so nothing burns and everything gets evenly toasted.
2. Once the pumpkin seeds start to pop and the ingredients get golden, add the salt, vanilla and maple, and mix thoroughly to make sure everything is well coated.
3. Let caramelize for 1-2 minutes, and transfer to a plate to cool. Let cool for 5-10 minutes, or as long as you can. It’s ready!
4. Serve as a topping and store the rest in an airtight container, only once completely cold.
